Zucchini, Goat Cheese, and Tomato Frittata Recipe :-I enjoy tomatoes in their raw form, I enjoy them on toast and grilled cheese sandwiches, I enjoy them roasted on pizza, and I especially enjoy them on this zucchini and tomato summer frittata. In addition to being a simple dish to prepare, this frittata made with summer vegetables is an excellent way to integrate fresh vegetables into your everyday diet.

WHY I LOVE THIS ZUCCHINI AND TOMATO SUMMER FRITTATA

 

  • This dish was inspired by the ingredients I had in my refrigerator. A frittata is a dish that is really simple to put together, and this particular frittata is the first one that I have prepared in a skillet made of cast iron in a very long time.
  • It is true that preparing a frittata in a rice cooker is a wonderful and simple process; however, if you use a skillet made of cast iron, you will be able to sauté your vegetables in the same pan that you use to cook the frittata, which is an even more wonderful experience.
  • In addition to being incredibly simple and delectable, this recipe only costs about $4.40 for four to six servings. Frittatas are delicious for breakfast, lunch, or dinner, and I couldn’t be more thrilled about the fact that we will be having three days of simple breakfasts this week.

 

INGREDIENTS :

  • 1 teaspoon oil
  • ½ medium onion sliced
  • 1 medium zucchini chopped
  • 1 clove garlic mince or crush
  • 6 eggs
  • ½ cup milk can use almond, cashew, cow’s
  • ½ teaspoon salt
  • pepper to taste
  • ¼ cup feta cheese optional
  • 2 medium tomatoes sliced

 

INSTRUCTIONS :

  • The veggies should be prepared by slicing the onion into wedges, chopping the zucchini into small pieces that are easily digestible, and trimming the tomato into approximately eight slices. Garlic should be minced.
  • A teaspoon of oil should be heated up in a large skillet made of cast iron. Simmer the onion for a few minutes, or until it becomes slightly translucent, whichever comes first.
  • Once the zucchini and garlic have been chopped, continue to sauté the mixture for another three minutes, or until the majority of the water has been extracted from the vegetables.
  • In the meantime, combine the eggs, milk, salt, and pepper to taste by whisking them together. Immediately after the vegetables have finished cooking, pour the egg mixture into the pan.
  • After allowing the dish to continue cooking on the stovetop for an additional two minutes, cover it with the crumbled feta cheese and the sliced tomatoes.
  • Take the item off the cooktop and place it in the oven. Bake at 350 degrees Fahrenheit for thirty to thirty-five minutes, or until the food is completely cooked through and has a light brown colour on top.
  • After allowing it to somewhat cool, carefully take it from the pan and then slice it into four to six pieces. Immediately serve, or store in the refrigerator or freezer until you are ready to get your hands on it.
  • Fresh herbs, such as basil or parsley, can be sprinkled on top as desired.
