These zucchini and corn fritters are something I adore. Who am I kidding? It was obvious to combine the two—I adore fritters of any kind, and zucchini is one of my favourite cooking vegetables!

I’m constantly searching for novel ways to add some fresh flavour and texture to the standard zucchini patty, to make it a little more intriguing. I was right when I believed maize and zucchini would make the ideal combination! This is a fantastic dish to encourage your kids to eat their vegetables!

Ingredients
- 2 large zucchini (shredded)
- 1 cup corn kernels
- 1 cup all-purpose flour
- ¼ cup breadcrumbs
- 2 eggs
- ¼ cup dill (chopped)
- ½ teaspoon cayenne pepper
- salt and pepper (to taste)
- vegetable oil (for frying)
Instructions
Prepare the zucchini by shredding it and adding it to a mixing dish. Using three or four paper towels, I try to absorb some of the moisture from the zucchini by placing it on them and pressing the liquid out.
Include Ingredients: Fill the basin with corn. Mix thoroughly after adding the flour, breadcrumbs, eggs, dill, cayenne, salt, and pepper. Add extra flour as necessary if the mixture seems too thin.
Heat Oil: Place about 1/4 cup of oil in a skillet and heat it over medium heat. The oil should be around 1/4 inch deep.
Fry: Using a spoon, scoop out the mixture and drop it into the hot oil when the skillet is ready but not smoking. Let it cook for two to three minutes, or until it turns golden brown. After 2 to 3 minutes, flip it over and continue cooking until the other side turns brown. Repeat with the remaining batter, then place the fried fritters on a platter lined with paper towels to absorb the oil.

Storing Leftover Zucchini Corn Fritters
Before storage, make sure your fritters are completely cool to room temperature! Transfer to a big sealable bag or an airtight container. Store them in the refrigerator for up to three days.
Reheating
Microwave: To maintain their crispness, reheat them in the oven or in the microwave for 10 to 20 seconds at a time until they are well heated.
Oven: Set the temperature to 375°F. After placing the fritters on a sheet pan, bake them for ten to fifteen minutes, or until they are well heated.
Freezing
Before freezing, allow the zucchini corn fritters to cool completely to room temperature.
The fritters should be frozen for one to two hours, or until solid, on a baking sheet covered with parchment paper and covered with plastic wrap. For up to three months, store them in the freezer by transferring them to an airtight container or freezer bag.
