White Chocolate Raspberry Scones Recipe

Ingredients :

  • 2 1/2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 8 tablespoons unsalted butter * cold, cut into cubes
  • 1 egg
  • 1 cup heavy cream * may need more or less
  • 1/2 cup white chocolate chips
  • 1/2 cup fresh raspberries

Instructions :

Warm the oven up to 425°F.

You can mix the flour, sugar, baking powder, and salt together in a big bowl.

Use a pastry cutter or fork to cut in the butter until the mixture looks like coarse crumbs.

Mix the egg and 1/2 cup of heavy cream together in a small bowl.

Add the heavy cream (I used a cup total) and mix it into the flour. If you need to, add more heavy cream until the dough just starts to stick together.

Mix the cherries and white chocolate chips together. To do things, I like to use my hands. It’s okay if the raspberries break up.
Make two round shapes out of the dough that are about half to three quarters of the way up. Make 6 triangles out of it.

If you have a Silpat Mat, put them on a baking sheet that has one on it.

Bake for 10 to 12 minutes, or until the top is just barely browned.

Tips & Techniques for the Best White Chocolate Raspberry Scones

This will work best if the butter is very cold.

Don’t let air in when you store extra scones; use them within 1-2 days for the best results.

FAQ’s :

Can scones be made ahead of time?

You can bake the scones the night before. Cut the dough into squares, and then put them in the fridge until morning, or whenever you need them.

Can you freeze scones?

Yes. If you want, you can shape and cut the scone dough. Seal them up in plastic wrap and put them in the freezer. You might need to add a few minutes to the recipe’s bake time. The best time to use cold scones is within a month.
