Instructions

In a large saucepan, bring one tablespoon of olive oil to a boiling point over medium heat. Add the carrots, celery, and onion that have been diced.

Sauté the vegetables for around five to seven minutes, or until they reach the desired tenderness. Garlic that has been minced and ground turkey should be added to the pot.

 

While the turkey is cooking, split it up with a spoon and continue cooking it until it is browned and cooked all the way through.

After the lentils have been rinsed, add them to the pot along with diced tomatoes, a bay leaf, and either chicken or vegetarian broth.

Once the soup has reached a boil, reduce the heat to a low setting and allow it to simmer, covered, for approximately thirty to forty minutes, or until the lentils have reached the desired tenderness.

 

Taste the soup once the lentils have been cooked, and if necessary, make any necessary adjustments to the spice. Before serving, remove the bay leaf from the dish.

Transfer the soup to bowls, and if wanted, garnish with fresh parsley. Serve the soup while it is still hot.

 

Tips for Success

To remove any dirt or debris that may be present, the lentils should be rinsed before being added to the soup.
