Isn’t breakfast the most significant meal of the day? It is, of course! I also adore a hearty breakfast. I would almost have to answer that my favourite food is breakfast food, especially large sandwiches like this one that are piled high with cheese, bacon, and omelettes. Indeed, this is a champion’s breakfast—and aren’t we all champions?

Ciabatta buns are so delicious that I adore them for sandwiches. Here’s a straightforward omelette sandwich, topped with bacon and goat cheese, two of my favourite cheeses. A breakfast sandwich would not be complete without bacon! Feel free to substitute feta cheese, blue cheese, or any other cheese that pleases you if goat cheese isn’t your thing. However, the goat cheese on the omelette is delicious and creamy, nearly melted. Delicious and simple to prepare.

Ingredients

  • 4 eggs
  • ½ tablespoon dry oregano
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 1 tablespoon butter
  • 2 ciabatta buns (cut in half)
  • 1 cup kale (or lettuce)
  • 2 ounce goat cheese (crumbled)
  • 4 slices bacon (fried)
  • 1 tomato (sliced)

 

Instructions

Add the oregano, salt, and pepper to the eggs and whisk.

Melt the butter in a skillet or pan. Transfer the egg mixture into the pan, making sure it covers the entire bottom of the pan. Cook for one or two minutes, or until the underside is golden, then turn. After 20 to 30 more seconds of cooking, remove from pan.

Place some lettuce or kale leaves on the bottom of each sandwich before assembling it. Place half of the omelette, a quarter of the crumbled goat cheese, two bacon slices, a few tomato slices, and the top bun on top. With the second ciabatta bun, repeat.
