Tasty Southern Salmon Croquettes Recipe

Ingredients
- ½ cup flour
- ¼ cup yellow cornmeal
- 15 ounces canned salmon
- 1 red bell pepper , finely chopped
- ½ cup sweet onion , diced
- 1 large egg , beaten
- 1 teaspoon Worcestershire sauce
- ½ teaspoon seasoned salt
- ¼ teaspoon pepper
- ½ teaspoon garlic powder
- ¼ cup mayonnaise
- ¼ cup cilantro , chopped
- Olive oil for frying
Instructions
In a cast iron skillet measuring 12 inches in diameter, add cooking oil to a depth of approximately 1 inch. Bring to a simmer on the stove under medium heat. If you sprinkle a small amount of water over the surface of the oil and it crackles, then the oil is ready to be used for frying.
Combine the salmon, mayonnaise, lemon, egg, and Worcestershire sauce in a bowl as the oil is starting to heat up. Be sure to thoroughly combine the onion, Creole spice, salt, and pepper.

To the salmon mixture, crush thirteen to fifteen saltine crackers and add them. Once more, thoroughly combine. To use as a dredging for patties, crush the remaining crackers into a fine powder on a small dish.
Your hands should be used to gently shape small to medium patties out of the salmon mixture. After that, carefully drop the patties in the finely crushed saltines and pat them to ensure that they are covered on all sides.
Patties should be fried in hot oil for two to three minutes on each side, or until they become a golden brown colour. Take the food out of the oil and place it on a baking rack with a paper towel placed below it. While still heated, serve.
