I enjoy making bread as much as I enjoy eating it. And during my life, I have baked a lot. However, nothing makes me happier than the smell of a freshly baked loaf. And this bread is definitely not let down. It’s really beautiful and has the most terrible stench.
Ingredients
2½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
1 teaspoon salt
½ teaspoon black pepper (freshly ground )
¼ teaspoon red pepper flakes
½ cup Parmesan cheese (freshly grated)
½ cup cheddar cheese (grated)
½ cup Kalamata olives (pitted and sliced)
2 teaspoon fresh thyme leaves (chopped plus extra for top)
2Â eggs
3 tablespoon olive oil
1¼ cup buttermilk

Turn the oven on to 350°F. Grease and place parchment paper inside a 12-inch loaf pan. I would divide the batter and bake it in two standard loaf pans if you don’t have a 12-inch loaf pan. Put aside.
In a large bowl, stir together the flour, baking powder, baking soda, salt, pepper, and red pepper flakes. Stir them thoroughly. Mix in the cheeses, olives, and thyme leaves. Whisk the eggs together in a another basin. Whisk together the buttermilk and olive oil after adding them.
Using the flour mixture, create a well, and then pour the egg mixture into the well. The batter should be stirred until it turns thick and sticky. For the purpose of combining everything, I utilized a wooden spoon. To adjust the consistency of the batter, add some more buttermilk if it is too dry, and add some more flour if it is too wet. It should be scraped into the prepared tin, and if desired, additional thyme leaves or sprigs should be sprinkled on top.
To ensure that a toothpick placed into the center of the cake comes out clean, bake it for forty-five minutes to one hour. The loaf should be allowed to cool for five minutes in the pan before being transferred to a wire rack to completely cool down to room temperature.
