A layer of fresh berries that is sandwiched between two layers of sweetness that are thick and fluffy makes for a dessert that is indeed quite pleasant to the palate. In addition, this traditional dessert from the South does not require any baking at all. Because we are fortunate enough to reside within a few of miles of three strawberry farms, I simply cannot wait until each year till they open their doors to reveal their stunning and abundant harvest of berries that are just about ready to be picked.
INGREDIENTS
- 2 1/2 c. graham cracker crumbs
- 12 T. unsalted butter, melted
- 5 to 6 c. sliced fresh strawberries
- 1 (3 oz.) package strawberry Jell-o
- 2 (8 oz.) packages cream cheese, softened
- 1 c. confectioners’ sugar
- 4 c. whipping cream
- 2 tsp. vanilla extract, divided
- 6 T. granulated sugar
INSTRUCTIONS
The Strawberry Filling can be prepared by placing sliced strawberries in a skillet and then sprinkling them with dry Jell-o powder. Give the mixture a gentle stir to ensure that the berries are equally coated. The Jell-O should be heated over medium-low heat until it completely dissolves.
Take the food off the heat and leave it aside to warm up.
Put together the crust by: The graham cracker crumbs and the melted butter should be mixed together in a bowl. Make sure the crumbs are wet by blending them with a fork. Keep three tablespoons of the crumbs aside so that you may sprinkle them on top. The crumb mixture should be pressed into the bottom of a pan that is 9 inches by 13 inches and has been sprayed with non-stick cooking spray.

Get ready to make the cream cheese mixture by: Blend together, using an electric mixer, cream cheese that has been softened, confectioners’ sugar, and one teaspoon of vanilla extract until the mixture is completely smooth. Whipping cream, granulated sugar, and the remaining one teaspoon of vanilla essence should be whipped together in a separate bowl until stiff peaks are formed. The whipped cream and cream cheese mixture should be mixed together by hand until they are thoroughly incorporated.
Put together the layers of Yum Yum: Spread the cream cheese and whipped cream mixture over the crust in an equal layer, using slightly less than half of the total amount. Spread the strawberry filling that has been allowed to cool in a uniform layer over the cream cheese layer using a spoon. The remaining cream cheese and whipped cream mixture should be placed on top of the strawberry layer.
To ensure that the strawberry layer is entirely covered, spread it out in an even and gentle manner. The remaining three tablespoons of graham cracker crumbs should be sprinkled on top of the dish. Before serving, cover and place in the refrigerator for a maximum of several hours or overnight.

NOTES
For this dish, around 5 to 6 cups of sliced strawberries can be obtained by using two packages of strawberries that are 16 ounces in size. In the event that you would rather, sugar-free strawberry Jell-o would work just fine.
