The lava cake was, of course, devised by a French cook. Still, it was manufactured in the United States because he made it in his restaurant in New York. It was invented by chef Jean-Georges Von Gerichten by accident, when he discovered a chocolate cake was still gooey in the middle after removing it from the oven too soon. He put it on his menu as molten chocolate cake after tasting it.

Ingredients

  • 2/3cupwhite chocolate
  • 1/2cupunsalted butter chopped
  • 2/3cupall-purpose flour
  • 1/2cuppowdered sugar
  • 1/2cupof strawberry curd
  • 1teaspoonlemons zest
  • 1tablespoonlemon juice
  • 3vanilla beans seeds only* or 1 tsp vanilla extract
  • 4large eggs room temperature
  • 4large egg yolks room temperature
  • 4-5drops pink gel food color optional

 

Instructions

Preheat the oven to 425 degrees Fahrenheit. Place six ramekins, each holding six ounces, on a baking sheet and butter them. Put aside for later. The white chocolate and butter should be placed in a big bowl that is safe for the microwave and heated for one minute.

Microwave the mixture for 15 seconds at a time, stirring it occasionally, until it is completely melted and smooth. After each interval, make sure to stir the mixture thoroughly. Following the melting of the combination, incorporate the following ingredients into the mixture: flour, powdered sugar, strawberry curd, lemon juice, lemon zest, pink gel food color (if you are using it), and vanilla bean seeds or vanilla extract.
