Strawberry and Feta Salad-Easiest Recipe Ever

Toss arugula greens, feta cheese, cucumber, cherry tomatoes, and strawberries in a vinaigrette made from fresh strawberry puree and balsamic vinegar. The vinegar makes the salad naturally sweet.

 

Ingredients

For the dressing

  • ¼ cupsliced strawberries
  • 3 tablespoonsextra virgin olive oil
  • 2 tablespoonsbalsamic vinegar
  • 1 tablespoonchopped shallot
  • 1 tablespoonfresh lemon juice
  • 2 teaspoonshoney or maple syrup
  • ½ teaspoon salt
For the salad

  • 8-10 ouncesarugula or spinach greens, or a 50/50 mixture
  • ½ cupItalian parsley leaves (tender stems are okay) or basil leaves
  • 1 poundstrawberries, hulled and quartered
  • 1English (seedless) cucumber, sliced into 1/2-inch chunks, or 3 baby Persian cucumbers, sliced
  • 1 pintcherry tomatoes (any color), sliced in half
  • ¼ cupsliced red onion
  • ½ cupcrumbled feta cheese

Instructions

To make it smooth and creamy, blend or process all of the ingredients in a small food processor. You can make the vinaigrette up to 5 days ahead of time.

Put the arugula in a big bowl for salad or a big platter to serve. Add the rest of the ingredients on top and drizzle 3 tablespoons of the dressing over them. Gently toss them together. Put extra dressing on the side and serve.

 

Notes and Tips

You can make the dressing up to 5 days ahead of time and store it in the fridge in a container with a lid. A glass jar works great for this. Before you dress the salad, give it a shake to mix it up.

 

Dress the salad right before serving so that the dressing doesn’t wilt the greens. You can put the salad together in a serving bowl without the clothes on and cover it with a clean, damp towel to make it ahead of time for a party or picnic. It can be kept in the fridge for six hours.
