Slow Cooker Peach Upside Down Cake Recipe

Ingredients :

  • non stick cooking spray
  • ¼ cup salted butter melted
  • 1 cup brown sugar
  • 3-4 peaches peeled and sliced
  • 15.25 oz. yellow cake mix I use betty crocker
  • ½ cup oil
  • 1 cup water
  • 3 large eggs
  • 1 tsp. vanilla extract

Instructions :

Use a LOT of cooking spray or butter or oil to clean your slow cooker.

Spread the brown sugar out on the bottom of the slow cooker and then add the melted butter. Use a spoon to mix it up a little, then spread it out evenly on the bottom of your slow cooker. Place the peach slices on top of the brown sugar mix.

Put the cake mix, water, eggs, oil, and vanilla in a medium-sized bowl. Use a spoon to mix until everything is mixed together. Do not overmix or try to get rid of the lumps. Spread the batter out over the peaches in the crock pot.

After putting the lid on, cook on HIGH for two hours. It might take a little less time if your slow cooker cooks hot. When the cake is set in the middle, you know it’s done.

When the cake is done, take the disk out and set it on a cooling rack. It should be cool for 20 minutes before you try to flip it over onto a plate or cutting board. If you can, move the cake to a plate or cutting board with two people.

Sarah’s Notes :

I think that ripe peaches make the best peach cake. Since the peaches have been in syrup for a while, they won’t last as long in a can. Also, I think you shouldn’t use frozen peaches.

Put any cake that’s left over in a jar that won’t let air in. You can leave it on the kitchen counter for a few days, but you should eat it within two to three days. Put it in the fridge to make it last longer..
