This is a dish that is likely to become a favorite in your kitchen, whether you are using it to reward yourself after a long day or to impress guests with a quick prepared dessert.

Ingredients

For the Filling:

  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

For the Cobbler Topping:

  • 1/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons unsalted butter, cold and cubed
  • 2 tablespoons milk

Optional Toppings:

  • Vanilla ice cream or whipped cream, for serving
  • Fresh mint leaves, for garnish

Instructions

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Before you begin, prepare a small baking dish or ramekin that is safe for use in the oven by lightly coating it with butter or non-stick cooking spray.

Strawberries that have been cut, granulated sugar, cornstarch, lemon juice, and vanilla essence should be mixed together in a small basin. To ensure that the sugar mixture is distributed uniformly throughout the strawberries, gently toss them.

While you are preparing the topping for the cobbler, keep the strawberry combination at room temperature. This will allow the strawberries to release some of their juices.

The all-purpose flour, granulated sugar, baking powder, and salt should be mixed together in a separate bowl using a whisk until they are thoroughly incorporated.

Put the butter that has been cut into cubes into the flour mixture. You can use your fingers or a pastry cutter to incorporate the butter into the flour mixture until it resembles coarse crumbs. The butter should be dispersed uniformly throughout the flour mixture, as this is the desired result.

When the milk has been poured into the flour mixture, whisk it until a dough that is thick and sticky has formed. Take care not to overmix the items. The strawberry filling should be transferred into the ramekin or baking dish that has been prepared, and it should be smoothed out into an even layer.

Dropping small clumps of the cobbler topping over the strawberry filling, using either a spoon or your fingers, ensure that the filling is covered to the greatest extent feasible. The ramekin or baking dish should be placed on a baking sheet (to catch any drips that may occur) before being transferred to an oven that has been preheated.

Bake the strawberry cobbler for twenty-five to thirty minutes, or until the mixture is bubbling and the topping is golden brown and cooked all the way through. Following the completion of the baking process, take the strawberry cobbler out of the oven and allow it to cool for a few minutes before serving.

The strawberry cobbler that is served in a single serving should be served warm, and if wanted, it should be topped with a scoop of vanilla ice cream or a dollop of whipped cream. Use fresh mint leaves as a garnish to add a splash of color and flavor to the dish.

Indulge in the goodness of your handmade strawberry cobbler as soon as it comes out of the oven and enjoy its cozy qualities.

Notes

Because I use strawberries that are really ripe, the crust of the fluffy cobbler is only slightly sweetened. I serve this with vanilla ice cream before serving. If you would want a crust that is sweeter, you can increase the amount of sugar if you so choose.
