Preheat the oven to 425 degrees Fahrenheit. As soon as the large skillet is hot enough, melt two tablespoons of butter. Place the skillet over medium heat. Cook the onion and bell pepper for five to eight minutes, stirring them occasionally, until they have become more tender.

This recipe can be made with a variety of meats, or you can opt to make it without any meat at all.
You can substitute rotisserie chicken with chicken breasts or chicken thighs that you have prepared yourself, or you can use any leftover chicken that you have.
