Simple Foiled BBQ Chicken with Corn on the Cob and Pinto Beans Recipe
This dish is great for a summer barbecue or a quick dinner during the week.
Ingredients
- 8Â chicken drumsticks
- 4Â small ears corn
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon butter, melted
- ½ cup barbeque sauce
- 1 (15 ounce) can pinto beans, rinsed and drained

Directions
Warm up the oven to 230 degrees C (450 degrees F). Spread a little oil on 4 big (12×18-inch) sheets of aluminum foil.
Put two chicken drumsticks and a corn ear in the middle of each piece of foil. Add black pepper and salt.
Spread warm butter over the corn. Put barbecue sauce on top of the chicken. Spread pinto beans out evenly on each piece.
Make a rough seal around the sides of the foil and fold it over the chicken and corn. Place the foil bags in a baking dish.
It will take about 40 minutes of baking until the chicken is no longer pink at the bone and the juices run clear. If you put an instant-read thermometer close to the bone, it should show 165 degrees F (74 degrees C).
