  • 8 ounces (about 2 cups) of rotini pasta or any pasta shape of your choice
  • 1 tablespoon of olive oil
  • 1 pound of ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 packet (1 ounce) of taco seasoning mix
  • 1 can (14.5 ounces) of diced tomatoes, drained
  • 1 can (4 ounces) of diced green chilies, drained (optional)
  • 1 cup of shredded cheddar cheese
  • 1 cup of shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Chopped fresh cilantro, for garnish (optional)
  • Sliced green onions, for garnish (optional)
  • Sour cream, for serving (optional)
  • Sliced jalapeƱos, for serving (optional)

 

INSTRUCTIONS :

To prepare the pasta:

Create a boil in a large saucepan of water that has been seasoned.

After the water has to a boil, add the pasta and continue cooking it until it reaches the al dente stage, as directed on the package.
After the pasta has finished cooking, rinse it and set it aside.

Prepare the meat for the tacos:

 

While the pasta is cooking, get the olive oil to a good temperature in a big skillet by heating it over medium heat.

Once the ground beef or turkey has been added to the skillet, use a spoon or spatula to break it up into smaller pieces.

To ensure that the beef is browned and cooked all the way through, stir it occasionally while it is cooking.

The meat that has been cooked should be added to the skillet along with the minced garlic and diced onion. Continue to cook for a further two to three minutes, or until the onion has become translucent and softened.

Combine the taco seasoning mix with the meat and vegetables, stirring it in until it is equally distributed.

Prepare the Ingredients by Mixing:
