Sweet potatoes cut thinly, cooked with lots of cheese and a creamy butter and garlic sauce. All of the natural flavours are enhanced and the sweetness of the potatoes is counterbalanced by the savoury cream. The casserole is sure to please even the pickiest eaters.
Ingredients
- 3 lbs sweet potatoes, sliced
- 4 Tbsp unsalted butter
- 4 garlic cloves, minced
- 1 Tbsp all-purpose flour
- 1/3 cup parmesan cheese
- 1 cup whole milk
- 1 cup heavy whipping cream
- 1 tsp sea salt
- ¼ tsp ground black pepper
- 2 cups Colby Jack cheese, shredded
Instructions
Sweet potatoes should be peeled and thinly sliced into rounds.
Add the garlic and butter to a pot and cook until fragrant. Stir in the flour just until incorporated.
After adding the milk, cream, Parmesan cheese, and seasonings, gently simmer the mixture.
Take the cream from the stove and let it cool. Stir in the shredded cheese after it has cooled.
Place the sweet potato slices in a casserole dish in rows, then cover the slices with the cheese mixture.
Bake for 30 to 35 minutes at 400°F with a foil cover. Take off the foil and bake for a further 8 to 10 minutes. Warm up and serve.
