This is a tasty winter squash that is naturally sweet, tender, and nutty when cooked. You can eat it with any food as a side dish. Here are some easy steps to follow to cook delicata squash. Not necessary to peel!

Ingredients

  • 2 Delicata squash
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

Warm the oven up to 425F. Take off the ends of each squash and cut them in half down the middle. Use a spoon to get out the seeds and any stringy parts, then throw them away.

Cut the squash into pieces that are ½ of an inch thick. Mix the squash with the olive oil, salt, and pepper in a big bowl or on a large baking sheet with a rim made of parchment paper. Place them on the baking sheet in a single layer.

Put it in the oven for 15 minutes, or until the bottom gets a little brown. After flipping the slices over, cook for another 10 minutes or until the other side is browned and soft.

Serve right away, and if you want, add more salt and pepper to taste. In a sealed container, leftovers can stay fresh in the fridge for up to 5 days.

Notes

Make sure to wash the squash first. Since the skin is still on, use a brush to clean the squash well. Anyone can change the flavor if they want to. You could also use fresh herbs like sage, rosemary, or thyme.

To make the squash taste better, you can also add curry powder, pepper powder, garlic powder, or onion powder. So that the squash is sweeter, you can add brown sugar or maple syrup.

You can also use chili pepper or smoked paprika for a spicy-smoky taste that goes well with the sweetness of the delicata squash.

For safe cutting, you need a knife that is very sharp. Do not throw away the seeds! They can be roasted like pumpkin seeds. Because delicata squash is so flexible, you can add a lot of different things to it to make it bigger!

Put some cheese with it, like feta cheese, goat cheese, mozzarella cheese, or parmesan cheese. Acorn, peanut, walnut, pumpkin, and sunflower seeds are just a few of the nuts and seeds that you can put on top of the squash. It’s also great with sliced fruit like apples or pears.
