For the Quesadillas:

  • 2 cups butternut squash, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 medium-sized flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup black beans, cooked and drained
  • 1/2 cup fresh cilantro, chopped
  • Cooking spray

For the Hot Honey Dipping Sauce:

  • 1/4 cup honey
  • 2 tablespoons hot sauce (adjust to taste)
  • 1 tablespoon unsalted butter
  • 1 teaspoon lime juice
  • Pinch of salt

  • Warm the oven up to 200°C/400°F. Cut up the butternut squash and corn kernels and put them on a baking sheet. Season with salt and pepper.


  • Put the vegetables in the oven and roast them for 20 to 25 minutes, or until they are soft and slightly caramelised.


  • Put the butter in a small saucepan and melt it over low heat.  Put in some salt, lime juice, honey, and hot sauce.


  • Mix everything together and heat it all the way through. Put away. Place four tortillas on a clean surface.


  • Put some shredded Monterey Jack cheese on top of each tortilla. Put butternut squash that has been roasted, corn, black beans and chopped cilantro on top.


  • Add more cheese on top, then cover with a second tortilla.  Put the big skillet or griddle over medium-low heat and spray it with cooking spray.


  • Put one quesadilla in the pan and cook it for two to three minutes on each side, or until the tortillas are golden brown and the cheese melts.


  • Do this again with the rest of the quesadillas. After the quesadillas have cooled for a minute, cut them into wedges.


  • Warm honey sauce to go with the roasted corn and squash quesadillas should be served on the side.
