Ingredientes

  • 500g de frango picado (5% de gordura)
  • 1 ovo
  • 3 colheres de sopa de aveia
  • 1 colher de chá de orégano seco
  • 1 limão com raspas
  • 2 colheres de chá de coentro moído
  • ½ colher de chá de cominho em pó
  • 2 colheres de sopa de salsa picada (retirada dos 30g dos ingredientes da salada, abaixo)
  • ½ colher de chá de óleo de colza, para fritar
  • Para o homus
  • 2 latas de 400g de grão de bico escorrido (líquido reservado)
  • 2 colheres de sopa de tahine
  • 1 limão espremido (cerca de 3 colheres de sopa)
  • 1 dente de alho
  • 2 colheres de sopa de azeite extra virgem
  • Para a salada
  • 2 cebolas vermelhas grandes, cortadas ao meio e em fatias finas
  • 1 limão, espremido
  • 30g de salsa picada
  • 200g de pepino cortado em pedaços
  • 4 tomates cortados em rodelas

Método

Using your hands, mix everything for the kofta together except the oil. Put away. Put the hummus ingredients and 3 tablespoons of the chickpea liquid into a bowl. Use a hand blender to blend the mixture until it is smooth.

 

If you want the mixture to be looser, add more chickpea liquid and blend it again. Put the onions and lemon juice in a bowl. Use your hands to scrunch the onions up to make them softer. Put the chopped parsley in last and then set it away.

 

Make 16 balls out of the koftas. In a large nonstick frying pan over medium heat, heat the rapeseed oil. Fry the koftas for 5 minutes on each side, until they are browned and cooked all the way through.

 

To finish them off on a grill, cook them until they just hold their form, and then put them on skewers. On the grill, cook for 4 minutes on each side. Koftas that haven’t been cooked can stay cold for a day in a container that won’t let air in.

 

Put half of the hummus on each of two plates. In a bowl, mix half of the quick-pickled onions with half of the cucumbers and tomatoes. Add the koftas and hummus to the salad and serve. Put the rest of the food in the fridge for another day. Will stay cool and covered for up to two days.
