Rainbow Chicken Skewers with Spicy Pesto Sauce Recipe : One of my favorite 30-minute dinners is Rainbow Chicken Skewers because they can be served low-carb on a bed of lush greens or over couscous that has just finished cooking. We had ours with some small potatoes and some roasted corn on the cob. And, unlike you, I’ll use any justification to use those wonderful, vibrant peppers in the produce aisle.

 

 

Rainbow Chicken Skewers with Spicy Pesto Sauce Recipe

 

INGREDIENTS

  • 2 boneless skinless chicken breasts
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1/2 red onion

SPICY PESTO SAUCE

  • 1 garlic clove
  • 1 bunch fresh basil leavesabout 2 packed cups
  • 1/2 jalapeno peppermore to taste, remove seeds for less heat.
  • juice of 1/2 lemon
  • olive oil
  • salt and pepper

 

 

INSTRUCTIONS

Chop the chicken, onion, and peppers into uniform 1-inch slices. Using skewers, thread them in any desired pattern, with the chicken chunks going between the peppers and onions.

 

In a small food processor, pulse the garlic, basil, jalapeño, and lemon juice until finely minced. This will make the pesto sauce. Add enough olive oil to create a sauce that is loose. To taste, add salt and pepper for seasoning. Store chilled until required.

 

Place the skewers of chicken on a baking pan and drizzle with a small amount of olive oil. Place the pan on the top rack and broil for approximately ten minutes on high. Flip over the skewers. After positioning a muffin tin on the oven rack, replace the baking sheet so that the skewers are in close proximity to the flame. Keep a close eye on them and cook until they get a lovely, scorched look. Aim for 165 degrees Fahrenheit for the chicken.

Present the skewers alongside the sauce.

 

NOTES

Ideas for dipping sauces: I like to serve these chicken skewers with a dip most of the time. I also like to make a small amount of excess marinade in a separate bowl and pan fried it with some chopped spring onions in olive oil. Or simply serve it with your preferred Asian sauce (chili garlic) or other condiment.

 

Taiwan paste or thick soy sauce: Taiwanese thick soy sauces are distinct from other varieties. The one I used is called Kimlan Soy Paste in the US, and instead of using black beans like other thick soy sauces from Taiwan, it is created from a blend of wheat and soybeans. Both rice and starch contribute to its thickness, and the sugar and sweetener in it provide the chicken skewers its nice reddish-brown glaze. Chances are that this type of soy sauce will be available in your go-to supermarket, but if that fails, you will definitely be able to grab a bottle in your local Asian store.

 

If you marinate the chicken overnight, the time specified in the recipe does not take it into consideration.
