INGREDIENTS

  • 1 medium red onion, very thinly sliced
  • ½ cup water
  • ¼ cup distilled white vinegar
  • ¼ cup apple cider vinegar or additional white vinegar
  • 1 ½ tablespoons maple syrup or honey
  • 1 ½ teaspoons fine sea salt
  • ¼ teaspoon red pepper flakes (optional, for heat)

Instructions :

Place the onions in a container that can withstand high temperatures and has a capacity of at least one pint. A mason jar or another container of a similar size would be ideal. To facilitate the collecting of any droplets of hot vinegar that may be formed at a later time, placing the jar in the sink will allow for the collection of the droplets.

The water, both vinegars, maple syrup, salt, and pepper flakes should be mixed together in a small pot if you want to maximise the flavour.
