Ingredients

  • 1 cup pumpkin puree
  • 1 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 2 cups powdered sugar
  • 1/2 cup graham cracker crumbs
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons coconut oil
  • Optional garnish: flaky sea salt

Instructions

Put the creamy peanut butter, pumpkin puree, maple syrup, pumpkin pie spice, and cayenne pepper in a large bowl. Mix everything together well.

Mix in the powdered sugar slowly until a thick dough forms. You can add more powdered sugar if the mixture is too sticky.

 

Add the graham cracker crumbs and mix them in until they are spread out evenly in the dough.
Put parchment paper on the bottom of a baking sheet.

Take small amounts of dough (a tablespoon or a small cookie scoop will work) and roll them into balls.

 

Once the baking sheet is ready, put the balls on it. After rolling all of the dough into balls, put the baking sheet in the freezer for 30 minutes to make the balls firm.

Get the chocolate coating ready while you wait. Put the semi-sweet chocolate chips and coconut oil in a bowl that can go in the microwave.

 

Stir the chocolate every 30 seconds while heating it in the microwave until it melts and is smooth.

Take the peanut butter balls that have been frozen out of the freezer. Slide a toothpick or fork halfway through each ball and dip it into the melted chocolate.

 

Put the balls back on the baking sheet that has been lined with parchment paper. If you want, you can add a pinch of flaky sea salt to the chocolate-covered balls to make them taste salty and sweet at the same time.

Once the chocolate is all over the balls, put the baking sheet back in the freezer for another 15 to 20 minutes to let the chocolate set.
