I made my Greek yogurt brownies first, then I came up with this easy protein cookie recipe. After trying and enjoying the brownies, my partner recommended making blondies with a similar recipe. That’s love—she may be a brownie supporter, but she understands that I like blondies. But since we’re both cookie lovers, how about using Greek yogurt to make protein cookies?

 

 

Ingredients

  • 220 grams (1 cup) thick Greek yogurt low-fat or full fat
  • 1 egg
  • 80 grams (â…“ cup 1 tbsp) granular sweetener erythritol
  • 90 to 100 grams (ca. 1 cup) almond flour defatted or full-fat, replace with oat flour

Optional Ingredients

  • ½ tsp vanilla extract
  • pinch salt
  • chocolate chips

 

Instructions

Turn the oven on to 190ºC, or 375°F.

Combine Greek yogurt, egg, erythritol granular sweetener, vanilla extract, and a little amount of salt in a large mixing dish. Mix until smooth and velvety.

 

Add the almond flour gradually and stir until a smooth mixture is achieved (you may need to add extra flour if the dough is too sticky, depending on the texture of the Greek yogurt). At this point, you can optionally mix in the chocolate chips.

Form nine cookies using a scooped portion of dough. Place the protein cookies, leaving space between them, on a baking sheet coated with parchment paper.

For ten to fifteen minutes, bake the protein cookies in a hot oven. Before serving, let the Greek yogurt cookies to cool.
