Ingredients

  • 1 pound fresh asparagus (about 20 thick spears)
  • Olive oil spray
  • 4 ounces prosciutto thinly sliced
  • black pepper freshly ground
  • ½ teaspoon red pepper flakes
  • 2 tablespoon parmesan grated

Instructions

Warm the oven up to 425°F. Use parchment paper that can stand up to high temperatures to line a big baking sheet with a rim.

Do not leave the tough ends of the asparagus on. Put olive oil on the asparagus and spray it. Cut each slice of prosciutto in half lengthwise with a sharp knife.

Put one half of a prosciutto slice around the middle of each asparagus spear and wrap it tightly.

Spread out the asparagus spears that have been wrapped in foil on the baking sheet that has been prepared. Spray them with a little more oil. For 8 to 10 minutes, bake the asparagus until it is soft but still crisp.

To make the asparagus taste better, grind some fresh black pepper and red pepper flakes into it, then top it with Parmesan cheese and serve.

Notes

The slices of prosciutto are very thin and are easy to tear. It is not easy to cut the prosciutto pieces and wrap them around the asparagus. Don’t worry too much about it, though.

You can still wrap the asparagus as best you can with the prosciutto, even if it tears. You might need to use more than one piece of prosciutto for each spear, but it will all come together in the oven.

The ham and parmesan already have a lot of salt, so don’t add any more. For this dish, it’s best to use asparagus spears that are pretty thick.

Putting the leftovers in a jar that won’t let air in will keep them in the fridge for up to 4 days. Cover them and heat them up again in the microwave at 50% power. I don’t think you should freeze the extra.
