Instructions:

  • Initially, you will need to prepare the pork medallions. Salt, pepper, dried thyme, and dried rosemary should be applied to both sides of the pork slices before making the marinade.
  • Within a large skillet, bring the olive oil to a temperature of medium-high. After adding the garlic that has been minced, sauté it for about thirty seconds until it becomes aromatic.

  • To the skillet, add the pork slices that have been seasoned, and cook them for approximately three to four minutes on each side, or until they are golden brown and cooked through. Taking the pork out of the skillet, keep it aside for later use.
  • The butter and the cut mushrooms should be added to the same skillet. Take around five to seven minutes to sauté the mushrooms until they reach a golden brown color and are soft.

  • To ensure that the mushrooms are equally coated, sprinkle flour over them and mix them thoroughly. Continue cooking for one more minute to smooth out the taste of the uncooked flour.
  • The chicken broth should be added gradually while being stirred regularly to prevent lumps from forming. The mixture should be brought to a simmer.

  • After pouring in the heavy cream, whisk the mixture constantly until it reaches a consistency that is thick enough to coat the back of a spoon. Add salt and pepper to taste, and season with salt.
  • You should place the pork medallions that have been cooked back into the skillet and then coat them with the mushroom cream sauce. In order for them to fully absorb the flavors, allow them to stew in the sauce for a few minutes.
  • Just before serving, garnish with parsley that has been freshly chopped.
