The autumn season has begun. What a great season! Now is without a doubt the best time of the year to bake, cook soups, chilli, stews, casseroles, roast meats and veggies, and bake. Also, butternut squash, acorn squash, pumpkin, apples, pears, and more are in season.

I also think pomegranates are a great fruit for cooking in the autumn. It tastes great with salads and even marinade sauces, and I love how sour it is.

Instructions

  • Warm the oven up to 400˺F.

  • Pour the marinade into a small pot set over medium-high heat. For 3 to 5 minutes, until thick and sticky, bring to a boil.
  • The salmon should be taken out of the oven after 7 minutes, and half of the marinate should be poured over it.
  • Put the salmon back in the oven and bake for another 5 to 7 minutes, or until it’s fully cooked.
  • Spread the salmon out on four plates and cover it with the rest of the marinate sauce. Feel free to add rice, salad, or roasted vegetables to your plate.
