Instructions:

  • Put the all-purpose flour, salt, and granulated sugar into a large mixing bowl and incorporate them all together. Combine the butter that has been chilled and cut into cubes.
  • Incorporate the butter into the flour mixture by using a pastry cutter or your fingertips. Continue doing this until the mixture resembles coarse crumbs with butter pieces that are about the size of peas.

  • The ice water should be added gradually, one tablespoon at a time, and the dough should be mixed until it just comes together on its own. Care should be taken to avoid overworking the dough.
  • In order to chill the dough, form it into a disc, wrap it in plastic wrap, and place it in the refrigerator for at least fifteen minutes.

  • The fresh pomegranate arils, cherries that have been pitted and cut in half, granulated sugar, cornflour, unsweetened cocoa powder, lemon juice, lemon zest, vanilla extract, ground cinnamon, and a pinch of salt should be mixed together in a medium-sized mixing bowl. Mix thoroughly until everything is incorporated.
  • Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). During the preheating process, you should also put a baking sheet in the oven. This will help ensure that the bottom crust is crisp.

  • Roll out the chilled pie dough into a circle with a diameter of approximately 12 inches on a surface that has been lightly dusted with flour.
  • Transfer the dough that has been rolled out carefully to a pie dish that is 9 inches in diameter, and gently press it into the bottom and up the sides of the dish. Remove any excess dough and crimp the edges in the manner that you prefer.

  • Pour the pomegranate cherry filling that has been prepared into the pie crust that has not yet been baked, and spread it out evenly.
  • This will give the pie crust a golden finish. Brush the edges of the pie crust with the beaten egg. The granulated sugar should be sprinkled all over the surface of the pie.

  • After placing the pie on the baking sheet that has been preheated, place it in the oven and bake it for fifty to sixty minutes, or until the crust is golden brown and the filling contains bubbles.
  • In the event that the edges of the crust begin to brown at an excessively rapid rate, cover them with aluminium foil or a pie crust shield halfway through the baking process.

  • Immediately after the pie has been baked, take it out of the oven and allow it to cool on a wire rack for at least two hours before slicing it and serving it. As a result, the filling is able to harden.
  • It is recommended to serve the Pomegranate Cherry Cocoa Pie at room temperature after it has been cut into wedges. You can enjoy it on its own, or for an even greater indulgence, you can add a dollop of whipped cream or a scoop of vanilla ice cream to it.
