In particular, I’m obsessed with these Potato Skins with Pepperoni Pizza. This is a simple dish that puts a humorous spin on everyone’s favourite food, pizza!

Ingredients
- 6 small russet potatoes
- ¼ cup olive oil
- ½ cup pizza sauce (your favorite)
- 1 ½ cups mozzarella cheese (shredded)
- ½ cup pepperoni (sliced or diced diced)
- 2 tablespoon fresh parsley (chopped)
Instructions
Oven Prep: Set oven temperature to 400°F.
Clean the potatoes well before baking. Each potato should be brushed with olive oil and lightly salted. After placing the potatoes on a baking dish, bake them for about 35 minutes, or until they are soft to the fork. Allow potatoes to cool somewhat.
Get the potatoes ready for the filling: Cut the potatoes in half, then remove the insides, leaving a thin layer of skin on each half. Once more, coat the insides of the potatoes with olive oil and bake for 5 to 10 minutes, or until the edges begin to crisp up. Then, flip them over and continue baking for an additional 5 to 10 minutes, or until they are nice and crispy.
To assemble your potato skins, stuff each one with diced pepperoni, shredded mozzarella, and pizza sauce.
Bake: Return to the oven and continue baking for a further five to seven minutes, or until the cheese is melted.
Serve: While still heated, garnish with parsley and savour.
Notes
For a unique variation, try using alfredo sauce instead of pizza sauce!
To create a variety of pizza potato skins, experiment with different cheeses and toppings!
For an even crispier potato skin, return the skins to the grill for a minute or two.
For added flavour, use chopped basil for the parsley.
