Ingredients

  • 6 small russet potatoes
  • ¼ cup olive oil
  • ½ cup pizza sauce (your favorite)
  • 1 ½ cups mozzarella cheese (shredded)
  • ½ cup pepperoni (sliced or diced diced)
  • 2 tablespoon fresh parsley (chopped)

Instructions

Oven Prep: Set oven temperature to 400°F.

Clean the potatoes well before baking. Each potato should be brushed with olive oil and lightly salted. After placing the potatoes on a baking dish, bake them for about 35 minutes, or until they are soft to the fork. Allow potatoes to cool somewhat.

Get the potatoes ready for the filling: Cut the potatoes in half, then remove the insides, leaving a thin layer of skin on each half. Once more, coat the insides of the potatoes with olive oil and bake for 5 to 10 minutes, or until the edges begin to crisp up. Then, flip them over and continue baking for an additional 5 to 10 minutes, or until they are nice and crispy.

To assemble your potato skins, stuff each one with diced pepperoni, shredded mozzarella, and pizza sauce.

Bake: Return to the oven and continue baking for a further five to seven minutes, or until the cheese is melted.

Serve: While still heated, garnish with parsley and savour.

Notes

For a unique variation, try using alfredo sauce instead of pizza sauce!

To create a variety of pizza potato skins, experiment with different cheeses and toppings!

For an even crispier potato skin, return the skins to the grill for a minute or two.

For added flavour, use chopped basil for the parsley.

Remaining food should be sealed and kept in an airtight container. Your potato skins will keep in the refrigerator for three to five days if stored properly.

Freezing/Make Ahead

As directed, bake the potatoes, scoop out the flesh, and freeze them on a baking sheet! They will last for six months when frozen if you place them in a freezer bag! There’s no need to thaw them when it comes time to serve them; simply bake them according to the directions on the recipe card.
