In addition to being suitable for use as a dessert, it would also be an excellent choice for use as a pastry for brunch. But although though you can eat it on a plate with a fork, the majority of the time at our house, we just pick up the squares with our hands when they have cooled down. It is prepared by layering phyllo dough, preparing a simple custard, and using a straightforward syrup. The end product is accordion folds of phyllo cookie dough that are buttery and crunchy, with a soft and sweet core and a sweet and sticky top. It is really fantastic.

Ingredients

  • 1 package phyllo dough 2 rolls
  • 1 cup butter melted
  • CUSTARD
  • 1 cup milk
  • 2 eggs
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract recommended, but optional
  • SYRUP
  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon lemon juice

Instructions

Place the phyllo dough in the refrigerator overnight to completely defrost.  Heat your oven to a temperature of 350 degrees. In the event that you so desire, line a 9×13 pan with parchment paper.

By hanging the sheets from your hands and gathering or folding them into a loose accordion that is approximately one inch thick, you will be working with two sheets of phyllo dough at a time, piled one on top of the other. Consider watching this video for an illustration.

Fold the phyllo dough so that the folded side is facing up, and repeat the process until all of the phyllo dough has been utilized. Make any necessary adjustments or fluffings to your phyllo accordions to ensure that they fill the pan in a loose manner and do not have any dense folds.

Place the pan in the oven and bake the phyllo for a period of ten minutes. Once the phyllo dough has been removed from the oven, sprinkle the melted butter over it in a uniform layer. Please return to the oven and continue baking for a further ten minutes.

While the second bake is taking place, prepare the custard by combining the milk, eggs, sugar, and vanilla essence until they are thoroughly combined. In order to make pouring easier, it is recommended that you use a big measuring cup or bowl that has a spout for this step.

Once the phyllo has been removed from the oven, pour the custard over the top in an equal layer. Put back into the oven and continue baking for another thirty to forty minutes, or until the top is golden and crispy.

When the time for baking is almost up, you should start preparing the syrup. Sugar, water, and lemon juice should be mixed together in a small pot and heated over medium heat. Stir to incorporate, then bring to a simmer over low heat.

Continue to simmer the mixture until part of the moisture has evaporated and the syrup has thickened (think of the consistency of maple syrup; if it is too thin, it will result in a cake that is mushy).

In my experience, this process takes approximately ten minutes, but it may take longer for you depending on the pan that you are using. Take away from the heat.

When the cake has reached the desired color and the baking time of thirty to forty minutes has passed, take the pan out of the oven and spread the warm syrup over the top in a uniform layer.
After the cake has reached room temperature, cut it into pieces and serve it.
