Peanut Butter Brownie Bites Recipe

 

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/3 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • Optional: chocolate chips or chopped nuts for topping

Instructions

Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit). Line a tiny muffin tray with mini muffin liners or grease the tin with butter. Blend the peanut butter and unsalted butter together in a bowl that can be heated in the microwave. Stirring in between each 30-second period, microwave the mixture until it is completely melted and smooth. Add the granulated sugar and stir until it is completely incorporated.

Incorporate the eggs, one at a time, and then work in the vanilla essence after each addition. A second bowl should be used to combine the flour, cocoa powder, salt, and baking powder by whisking them together. Mix the dry ingredients into the wet ingredients in a slow and steady manner until they are almost completely incorporated. Take care not to over mix the items. Using a spoon, transfer the batter into the mini muffin tin that has been prepared, filling each cavity approximately two-thirds full.

 

If you so wish, you can use chocolate chips or chopped nuts to decorate the top of each individual mouthful of brownie. For ten to twelve minutes, or until a toothpick inserted into the center of the dish comes out with wet crumbs, bake the cake in an oven that has been prepared. The brownie bits should be allowed to cool for a few minutes in the muffin tray before being transferred to a wire rack to finish cooling completely.

 

Tips

For an extra peanut buttery flavour, use chunky peanut butter or add chopped peanuts to the batter. To easily remove the brownie bites from the muffin tin, gently run a knife around the edges before popping them out. These brownie bites can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
