Peach Financiers Recipe Learn Like A Pro
Don’t use too much fruit because it’s only there to look nice. These little cakes are sweet, rich, and made with butter.
Ingredients
- 3 ounces unsalted butter plus additional for greasing
- 3Â egg whites
- ½ cup white sugar
- ½ cup almond meal
- 3 tablespoons all-purpose flour plus additional for dusting pan
- ¼ teaspoon vanilla extract
- ⅛ teaspoon salt
- 12Â small pieces of peeled peach
Directions
Warm the oven up to 400 degrees F. Butter a mini-muffin tin that holds 12 muffins very well. For each cup, add a pinch of flour and shake it around to cover the bottom.
In a pot over medium heat, melt the butter. The butter will foam up as it melts. To keep the pan from burning, keep moving it around while you toast the butter for about 4 minutes, or until it turns golden brown. Take it off the heat.
In a big bowl, mix the sugar and egg whites together with a whisk. For two or three minutes, whisk the egg whites until the sugar is gone and they get thick and foamy.
Add the flour, sugar, salt, and almond meal and mix well. Add the browned butter and mix it in. Fill muffin tins almost all the way to the top. To get rid of any air bubbles, tap the pan.
Five minutes in the oven. Take the pan out of the oven and put small pieces of peach on top of the financiers. Put the pan back in the oven. Ten to twelve more minutes of baking will do it.
Wait at least 10 minutes before taking it out of the pan.
