Ingredients
- ¼ cup olive oil
- 1 medium yellow onion chopped
- 5 garlic cloves minced
- 1/4 teaspoon crushed red pepper flakes
- 1 28- ounce can San Marzano whole peeled tomatoes pureed in a food processor or blender
- 1/2 teaspoon kosher salt
- 1/4 cup chopped basil
- 12 ounces spaghetti
- 2 tablespoons unsalted butter cut into pieces
- ¼ cup finely grated Parmesan cheese
- Extra basil and Parmesan for garnish

Instructions
Heat the olive oil in a big skillet over medium heat. When the onion is tender, add it and simmer it for ten minutes, stirring now and then. Cook for three minutes after adding the garlic and red pepper flakes. Add the pureed tomatoes and salt to taste.
Stir the sauce occasionally as it cooks until it begins to thicken. About 20 minutes will pass throughout this. Add the fresh basil and stir until the sauce thickens. Heat a big saucepan of salted water till it boils. Follow the directions on the package to cook the pasta until it’s al dente. **Drain the pasta and set aside ½ cup of the pasta water.
Reintroduce the pasta to the big pot along with the boiling pasta water and tomato sauce. Stir the spaghetti until it is coated with sauce. When the butter and Parmesan cheese are melted, add them and stir again. If preferred, top the spaghetti with Parmesan cheese and basil after plating.

Pomodoro means tomato in Italian so it’s basically pasta with tomato sauce. It is a classic Italian dish that is made with simple ingredients…and that is a GOOD thing! Sometimes simple is best and that is SO true about this dish.
The Greatest Pomodoro Pasta
Here are some pointers for creating the BEST pomodoro sauce. Since I love to share secrets, I will divulge. You don’t have to fear if you do have a dark secret; I’m not the kind to keep secrets. First, make sure the ingredients are high-quality. Since there aren’t many ingredients, you want to be sure that each one is of the highest calibre.
For this recipe, we use canned tomatoes—but only San Marzano whole peeled tomatoes. The BEST canned tomatoes are these ones. To ensure that the tomato sauce has the optimum flavour, utilise them. Before you begin, puree the tomatoes in a food processor or blender. Although we use spaghetti, you can instead use fettuccini, angel hair, or bucatini. DeLallo’s pasta is our fave!
For a little spice, add a little pinch of crushed red pepper flakes to the sauce. You can leave the kids out if they plan to eat it, but our guys don’t mind a little heat. To add back into the sauce, make sure you set aside ½ cup of the pasta water. Avoid skipping this step.
Finally, toss in some butter with the pasta. Even though you only require two tablespoons, just two tablespoons have a significant impact. The spaghetti gains richness from the butter. Don’t scrimp on the Parmesan cheese or fresh basil. Get the BEST Parmesan cheese for this dish as well.
