- 6 cups cornflakes (use gluten free, if needed)
- 1/4 cup grated parmesan cheese
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 large eggs, beaten

- 2 pounds chicken breast tenderloins

- 1/3 cup maple syrup
- 1/4 cup Dijon mustard
- 2-3 tablespoons hot sauce
- 3/4 teaspoon chipotle chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon fresh thyme

Instructions
Set oven temperature to 425°F. Use parchment paper to line a baking sheet.
Put the cornflakes, paprika, parmesan, onion powder, garlic powder, and a small amount of salt in a food processor. Pulse until fine crumbs form. An alternative is to tread on the crumbs in a ziplock bag to crush them. Transfer the crumbs to a small basin.
In a bowl, beat the eggs, add the chicken, and well toss to coat.
