Oatmeal Strawberry Banana Bread Recipe
We’re mixing some oats to make a whole grain flour for the banana bread that has that wonderful oatmeal flavor instead of using ordinary all-purpose flour.
Ingredients
- 2 cups rolled oats
- 2 large ripe bananas, 1 cup mashed
- 2 large eggs
- 3 Tbsp avocado oil
- 3 Tbsp pure maple syrup
- 1 tsp pure vanilla extract
- 2 tsp baking powder
- 1 tsp sea salt
- 1 ½ cups fresh strawberries, chopped

Heat the oven to 350 degrees Fahrenheit and place parchment paper inside a 9 by 5 inch loaf pan. The removal is made simple by the parchment paper. If you’d like, you can also use cooking spray to coat the bread pan.
Move the oats to a powerful blender and process at a high speed for 30 seconds, or until a flour forms.
In a sizable mixing bowl, mash the bananas until smooth. Add the eggs, pure maple syrup, avocado oil, and vanilla extract and stir until the wet ingredients are completely blended.
Add the dry ingredients (oat flour, baking powder, and sea salt) to the mixing bowl along with the wet mixture. Mix everything together until a thick batter starts to form.
Add the chopped fresh strawberries and stir.
Transfer the banana bread mixture into the ready-made bread pan, ensuring that it is evenly distributed. Add extra chopped strawberries to the batter’s top if you’d like.
To allow the bread to grow, cover the loaf pan with aluminum foil, leaving it colored. Remove the foil halfway through and bake for 60 to 75 minutes on the center rack of a preheated oven. By using foil, you may prevent the top of the bread from being overly dark and achieve the ideal golden brown finish by removing the foil halfway through. When the bread comes out clean and reaches 190–200 degrees Fahrenheit, it is deemed properly cooked. A digital thermometer can be used to measure the internal temperature of the bread. Use the thermometer method to determine the ideal bake time for the best results.
