INGREDIENT

  • 1/2 cup molasses
  • 1/2 cup dark brown sugar packed
  • 1/4 cup granulated sugar
  • 2 teaspoons ground ginger
  • 1 ½ teaspoons ground cinnamon
  • 3/4 cup butter softened
  • 2 large eggs at room temperature
  • 3 ¾ cups all-purpose flour properly measured
  • 1/2 teaspoon baking soda

 

INSTRUCTIONS

Preheat the oven to 350 degrees Fahrenheit. Make sure that two baking sheets are lined with either silicone baking mats or parchment paper. In a large bowl that can be heated in the microwave, combine the molasses, sugar, cinnamon, and ginger by stirring them together.

Use the microwave for approximately sixty seconds, or until the brown sugar has melted. After adding the butter, continue to stir until the butter has completely melted. Keep mixing until everything is thoroughly incorporated and the butter has cooled down a little bit.

Stir in the eggs until they are completely incorporated. After adding the flour and baking soda, whisk the mixture until it is completely combined. Place the dough on a surface that has been dusted with flour.
Roll out to a thickness of one quarter of an inch.

It is necessary to re-roll the scraps of dough after cutting it into the proper shapes. Approximately ten minutes into the baking process, the cookies should be puffed up and soft in the center. To complete the cooling process, put the cookies to a baking sheet after they have been allowed to cool for five minutes. Providing that it is stored in a ziplock bag that is appropriate for use in the freezer, it can be kept there for up to two months. After it has been totally cooled, it should be wrapped in plastic wrap, and then it should be placed in a container or a plastic bag that is acceptable for use in the freezer.
When it comes to the icing, you may store it at room temperature for up to three to four days if you store it in an airtight container. The addition of golden syrup will prevent it from crystallizing into a solid state.
