Instructions
Prepare the shortbread base
- Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit). Grease a baking pan measuring 9 inches by 9 inches and line it with parchment paper, making sure to leave an overhang on the sides for when you need to remove it.
- The butter that has been softened and the granulated sugar should be creamed together in a large mixing bowl until the mixture is frothy and light.
- While continuing to mix, add the flour and salt until a dough is formed.
- Press the dough into the bottom of the baking pan that has been prepared in an even manner. If you want to smooth it out, you can use the back of a spoon or your hands.
- In an oven that has been warmed, bake the shortbread base for twenty to twenty-five minutes, or until it is softly golden brown. After taking it out of the oven, let it to cool entirely in the pan by itself.
Make the caramel layer
- It is recommended to combine the sweetened condensed milk, butter that has not been salted, brown sugar, corn syrup (or golden syrup), and a pinch of salt in a saucepan of medium size.
- Stirring the mixture frequently while it is being cooked over medium heat will ensure that the butter is melted and the sugar is completely dissolved.
- Turn the heat down to a low setting and continue to cook the mixture while stirring it frequently for ten to fifteen minutes, or until it becomes thicker and turns a golden caramel color.
- Apply the caramel to the base of the shortbread that has been allowed to cool, and use a spatula to spread it out evenly. Before applying the chocolate coating, you should wait until it has completely cooled down and set.
Add the chocolate topping
- Chopped chocolate and one tablespoon of unsalted butter should be mixed together in a bowl that may be heated in the microwave.
- To melt and smooth out the chocolate, microwave it in intervals of thirty seconds, stirring it in between each interval, until it is completely melted.
- After the caramel layer has cooled, distribute the melted chocolate over it using a spatula to ensure that it is distributed evenly.
- For at least one to two hours, or until the chocolate has hardened, the millionaire’s shortbread should be stored in the refrigerator.
Serve and enjoy
When the chocolate coating has reached the desired consistency, remove the millionaire’s shortbread from the pan by using the overhang of the parchment paper. It should be placed on a cutting board, and then a sharp knife should be used to cut it into squares or bars.
You can serve this decadent treat to your guests and enjoy it with a cup of tea or coffee, or you can share it with your family and friends on those special occasions.
