Mexican Breakfast Casserole Recipe :-This great Mexican breakfast casserole recipe is loaded with the most flavorful ingredients, it is naturally gluten-free (and can also be made vegetarian), it is simple to make ahead of time the day before, and most importantly, it is unbelievable in terms of its deliciousness!

Mexican Breakfast Casserole Recipe 

 

INGREDIENTS :

  • 1.25 pounds ground sausage* or Mexican chorizo
  • 1 small white onion, peeled and diced
  • 1 poblano or green bell pepper, cored and diced
  • 4 cloves garlic, minced
  • 1 (15-ounce) jar red or green salsa (approx. 2 cups)
  • 1 (15-ounce) can black or pinto beans, rinsed and drained
  • 2/3 cup whole-kernel corn, frozen or canned
  • 1 teaspoon ground cumin
  • 1 teaspoon fine sea salt
  • 12 large eggs
  • 1/3 cup milk
  • 8 corn tortillas, halved
  • 3 cups shredded Mexican-blend cheese
  • optional toppings: diced avocado, diced red onion, chopped fresh cilantro, diced green onion, sliced fresh jalapeños, and/or crumbled cotija cheese

 

INSTRUCTIONS :

  • Preheat the oven to 400 degrees Fahrenheit. An oven-safe dish measuring 9 by 13 inches should be sprayed with cooking spray and then placed aside.
  • Crush the sausage as it cooks in a large sauté skillet over medium-high heat until it is browned. This should be done while the sausage is cooking.
  • The sausage should be transferred to a clean plate using a slotted spoon, and the grease from the sauté pan should be left in the pan for about a tablespoon for later use. In the event that there is no grease left in the pan, you may also add one tablespoon of oil to it.

 

  • Sauté the onion and pepper for five minutes, stirring after each minute, until the onion and pepper have become more tender. Continue to sauté the garlic for a further one to two minutes, turning it regularly, until it becomes aromatic.
  • The salsa, beans, corn, cumin, salt, and cooked sausage should be added to the mixture, and it should be stirred until it is entirely blended. The pan should be removed from the heat and set aside.
  • To ensure that the eggs and milk are thoroughly mixed together, whisk them together in a separate bowl and set them aside.
  • Now that we have everything layered, it is time to add the ingredients! In the bottom of the baking dish, arrange half of the tortillas in an equal layer all the way together.

 

  • After that, distribute half of the sausage combination, half of the egg mixture, and half of the cheese on top of the dish in an even manner. Using another layer of tortillas, sausage combination, egg mixture, and cheese, repeat the process two more times.
  • Cover the dish with aluminium foil and bake it for forty-five to fifty minutes, or until the centre of the casserole is completely cooked through and no longer jiggly (or until a toothpick that is inserted in the middle of the casserole comes out clean).
  • After transferring the baking dish to a wire cooling rack, let it to take ten minutes to cool down. After that, garnish with the toppings of your choice, slice, and serve while still warm!

 

NOTES :

  • Sausage: Any ground sausage of a high quality would be an excellent choice for this recipe! Depending on what you have available, you might use morning sausage, Italian sausage, Mexican chorizo, or any other type of sausage. All of these options—pork, beef, chicken, or vegan sausage—would be delicious!
  • Cheesy Topping: If you want the cheese that is on top of the casserole to be a little bit crispier, simply uncover the casserole during the last ten minutes of cooking time.
