Okay, so technically summer doesn’t start until late June, but since Memorial Day falls on a Monday, I like to think of it as the unofficial start of summer (also, with these recent 80-degree weather, it’s difficult to not be ready for summer).
Melon Lemonade Margarita Popsicles Recipe
INGREDIENTS
- 3 cups cubed watermelon
- 1/4 cup granulated sugar
- 1 teaspoon lemon zest
- 1/4 cup lemon juice
- 1/4 cup (2 ounces) tequila (or substitute lemon lime soda for non alcoholic)
- 2 tablespoons (1 ounce) triple sec (or more lemon lime soda)
- Sea salt, for serving
INSTRUCTIONS
Combine the watermelon, sugar, tequila, lemon zest, lemon juice, and triple sec in a blender. In one to two minutes, blend until smooth. Transfer the mixture into a big basin using a fine-mesh strainer, making sure to get rid of any leftover seeds and particles.
Fill paper cups or popsicle molds with watermelon mixture, then insert wooden sticks. Freeze for four hours or overnight, or until solid. Before you consume, coat with sea salt.
To store, wrap each one separately in plastic wrap and put it in a freezer-safe container or bag. For up to six months, freeze.

HOW TO UNMOLD MARGARITA POPSICLES
Nothing is more frustrating than wanting to eat frozen margarita popsicles but they’re stuck in the mold.
Run your mold under cool water, being very careful you don’t accidentally get water into the tops of your popsicles.
Don’t use hot water because you may accidentally melt your popsicles as you unmold them.
Gently pull your popsicle out. If it won’t come out, run the mold under water another 10 seconds and try again. Repeat until successful.
HOW TO STORE HOMEMADE POPSICLES
After unmolding your margarita popsicles, wrap each one in plastic wrap then place in a freezer-safe bag or container.
Assuming you don’t eat all of your watermelon popsicles right away, homemade popsicles can last in the freezer for up to 6 months.

Put your watermelon, sugar, lemon, tequila, and triple sec in a blender to make watermelon margarita popsicles. Process till smooth.
After straining the mixture through a fine mesh strainer into a large basin, remove any remaining particles and seeds.
After filling your popsicle molds, place your wooden sticks inside. Freeze for a minimum of 4 hours, preferably overnight, or until hard.
