INSTRUCTIONS

  • The chicken should be cubed, and I prefer to cut it into rather little parts. The chicken should then be placed in a medium bowl and let to season. Season the chicken with salt, pepper, Italian seasoning, and smoked paprika, and then toss it so that the ingredients are well distributed throughout the chicken. Once the flour has been added, give the chicken a gentle spin so that it is lightly coated.

  • To prepare the chicken, use a big skillet made of cast iron or a nonstick skillet coated with ceramic and heat it over medium heat. Add the butter and one tablespoon of olive oil to the skillet. When the oil is hot, add the chicken in a layer that is uniform throughout. As the chicken cooks, toss it twice or three times to ensure that it is browned and cooked all the way through. You should transfer it to a bowl or plate.

  • Establish the foundation for the sauce by incorporating the garlic, shallot, and sun-dried tomatoes, along with the remaining tablespoon of olive oil. Cook for three minutes, stirring frequently, until the vegetables have become aromatic and softened. Sprinkle the red pepper flakes, along with an additional teaspoon of salt and pepper, on top of the dish. Incorporate the tomato paste and the broth. Use your spatula to scrape up all of those delicious bits that are on the bottom, and stir to mix everything.

  • After stirring in the tortellini, bring the mixture to a simmer and then remove it from the heat so that it remains at a low simmer. The tortellini should be cooked after three to four minutes of simmering with the lid on. Turn the tortellini over halfway through the cooking process, at the two-minute mark, to ensure that it is cooking evenly.

  • Complete the dish by removing the lid and incorporating the chicken, spinach, cream, and parmesan cheese until all of the ingredients are thoroughly mixed together. While still heated, serve with additional parmesan cheese, freshly cracked black pepper, and fresh basil. Is your readiness to make a proposal!?

NOTES

  • When it comes to reheating, I have discovered that the tortellini absorb a significant amount of the sauce. Simply add a drop of water, reheat the food in the microwave or on the stovetop, stir it, and you are ready to enjoy the leftovers! Tortellini is brought back to its gloriously saucy state as a result of the water, which slightly loosens the sauce.

  • The amount of tortellini that comes in a packet might range anywhere from 12 to 20 ounces. For this recipe, I used exactly one pound (16 ounces), but to tell you the truth, it’s very adaptable. Tortellini can be used in a lesser or greater quantity, and the amount of broth can be adjusted by adding a splash more or a splash less.
