Friends, forget about chocolate for today. Today’s theme for these cookies is limes. We need variation in our cookies, and a lime is an unusual ingredient for a cookie.

Which is unfortunate because the balance of lime flavour, brightness, and acidity is just ideal. They really do melt in your tongue, as the name would imply. These cookies are amazing; they’re such a welcome change.

Ingredients

  • ¾ cups butter (unsalted, at room temperature)
  • 1 cup icing sugar (same as powdered sugar or confectioners sugar)
  • zest of 2 limes
  • 2 tablespoons lime juice
  • 1 tablespoon vanilla extract
  •  cups all-purpose flour
  • ¼ teaspoon salt
  • 2 tablespoons cornstarch

 

Instructions

Mix the wet ingredients together: Using a mixer, beat the butter and ⅓ cup of icing sugar until light and fluffy. Beat in the lime zest, lime juice, and vanilla until well combined. Mix the flour, cornflour, and salt in a bowl. Add the flour mixture to the butter mixture and beat on low speed until well blended.

 

Form the dough into two logs with a diameter of 2 inches each, wrap them, and refrigerate for at least one hour. Preheat the oven to 350°F.

Cut the dough into rounds that are 1/8 inch thick. Arrange cookies approximately one inch apart on baking pans.

 

After about 15 minutes of baking, chill the cookies on a wire rack.

Complete the cookies: Put the leftover ⅔ cup of powdered sugar into a plastic bag that can be sealed. Place the cookies in the bag with sugar while they are still warm, then toss to coat.

 

Notes

Storage: If they last that long, you can keep them at room temperature in an airtight container for up to three days. Don’t worry if you see that the powdered sugar melts into the cookie. Just add additional sugar to them or just roll them in a little more powdered sugar. No one will care or notice!

Freezing: These can be kept in the freezer for up to three months if placed in an airtight container!
