The entire thing is finished off with a sweet crumb topping. This Irish apple cake is sure to please your taste buds and warm your heart, regardless of whether it is served warm with a dollop of whipped cream or served cold with a cup of tea.
Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and diced
- 1/2 cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
For the Apple Filling:
- 3 large apples (such as Granny Smith or Braeburn), peeled, cored, and thinly sliced
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
For the Crumb Topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, cold and diced

Instructions:
Prepare the Apple Filling:
- Place the sliced apples in a large bowl and add the granulated sugar, ground cinnamon, ground nutmeg, and lemon juice.
- Toss the apples until they are evenly coated with the mixture. This should be set aside while you are making the cake batter.
Make the Cake Batter:
- Combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl. Mix until everything is evenly distributed. Mix thoroughly until everything is incorporated.
- The flour mixture should be the recipient of the cold, diced butter. Cut the butter into the flour with a pastry cutter or your fingers until the mixture resembles coarse crumbs. This should take about six minutes.
