The entire thing is finished off with a sweet crumb topping. This Irish apple cake is sure to please your taste buds and warm your heart, regardless of whether it is served warm with a dollop of whipped cream or served cold with a cup of tea.

 

Ingredients:

 

For the Cake:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract

 

For the Apple Filling:

  • 3 large apples (such as Granny Smith or Braeburn), peeled, cored, and thinly sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

 

For the Crumb Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, cold and diced

Instructions:

Prepare the Apple Filling:

  • Place the sliced apples in a large bowl and add the granulated sugar, ground cinnamon, ground nutmeg, and lemon juice.
  • Toss the apples until they are evenly coated with the mixture. This should be set aside while you are making the cake batter.

 

Make the Cake Batter:

  • Combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl. Mix until everything is evenly distributed. Mix thoroughly until everything is incorporated.
  • The flour mixture should be the recipient of the cold, diced butter. Cut the butter into the flour with a pastry cutter or your fingers until the mixture resembles coarse crumbs. This should take about six minutes.

 

  • In a separate bowl, combine the buttermilk, egg, and vanilla extract by whisking them together until they are completely smooth.
  • After adding the liquid ingredients to the dry ones, stir the mixture until it is almost completely combined. Take care not to overmix the items.

 

Assemble the Cake:

  • Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit). Either grease and flour a round cake pan measuring 9 inches in diameter, or line it with parchment paper to make removal easier.
  • In the pan that has been prepared, spread half of the cake batter in an even layer.

 

  • It is recommended that you arrange the sliced apples in an even layer on top of the cake batter, leaving a small border around the edges of the cake.
  • On top of the apple layer, carefully spread the remaining cake batter using a spatula. Spoon the batter onto the apple layer.

 

Make the Crumb Topping:

  • A small bowl should be used to combine the granulated sugar and all-purpose flour in order to make the crumb topping.
  • While the mixture is still cold, cut in the butter that has been diced until it resembles coarse crumbs.

 

Bake the Cake:

  • On top of the cake batter, distribute the crumb topping in an even layer for optimal results.
  • After the oven has been preheated, place the cake pan inside and bake for forty to forty-five minutes, or until the cake has a golden brown colour and a toothpick that has been inserted into the centre gets a clean result.
  • After removing the cake from the oven, allow it to cool for ten minutes in the pan before moving it to a wire rack to finish cooling completely.
