Homestead Cowboy Beans Recipe

Cowboy beans are what exactly? The name most likely originates from the time when pioneers were travelling along the trails and required dishes that were easy to prepare, quick to prepare, and satisfying. Because they can be prepared with just a little bit of water and because they can be stored for a very long period, beans were the ideal food to bring along on lengthy voyages. Including ground beef in this recipe results in a much more satisfying meal than it would have been otherwise.

 

Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced (approximately 1 cup)
  • 1 green bell pepper, diced (approximately 1 cup)
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • 8 slices bacon, cooked and crumbled
  • ¼ cup brown sugar (this is optional – you could omit)
  • 2 cans (28 ounces each) baked beans, we used Bush’s Original Baked Beans
  • ½ cup barbecue sauce
  • 2 tablespoons dijon mustard

 

Instructions

First, cook the bacon in a frying pan, and then remove it from the pan. Once the bacon has cooled down to the point where it can be handled, drain the grease and crumble it.

When browning the ground beef, use the same pan as before. Cook until the pink colour is no longer visible, and drain the grease if necessary.

The ground beef that has been cooked, crumbled bacon, onions, red and green bell peppers, and other vegetables should be layered inside of a slow cooker or crock pot.

To the slow cooker, add the beans that have been drained from the cans. Put in the other ingredients (seasonings and barbecue sauce), and mix until everything is incorporated. On high, cook for four to five hours, or on low, cook for up to eight hours.
