Homemade Vodka Sauce with Fresh Tomatoes :- This bright and exceptionally creamy Cherry Tomato Pasta Alla Vodka is the perfect summer spin on a classic Italian pasta. A creamy, spicy cherry tomato vodka sauce mixed with fresh pasta is incredibly good! Sweet summer cherry tomatoes, lots of basil, and lots of cheese on top are the key ingredients in this one-pot pasta recipe. This simple pasta gains a vivid layer of flavor and richness from the fresh tomatoes. This dinner can be served as a family every night of the week. In addition to being tasty and attractive on any table, everyone adores a good creamy vodka pasta.

 

Homemade Vodka Sauce with Fresh Tomatoes 

We all truly need this spaghetti alla vodka recipe for summer. The unexpected source of inspiration for it was Asher. One evening soon, she asked me if I could cook pasta alla vodka for dinner. Alla vodka is such a fall/winter dish, so at first I said no, but then I thought, “What if we made it summery?”

And this is where we are now because I just done it. Pasta with cherry tomatoes and vodka †Though everyone liked and joyfully drank Asher’s inspiration.

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 shallot, chopped
  • 4 cloves garlic, chopped
  • 2 tablespoons fresh oregano
  • 1-2 teaspoons crushed red pepper flakes
  • 6 cups cherry tomatoes, halved if large
  • 1/2 cup vodka
  • kosher salt and black pepper
  • 1 cup heavy cream or canned coconut milk
  • 1 pound short cut pasta
  • 3 tablespoons salted butter
  • 3/4 cup grated Parmesan cheese plus more for serving
  • 1/2 cup fresh basil, roughly chopped

 

Instructions

In a large skillet with sides, heat the olive oil over medium-high heat. Add the shallots and simmer for 3 minutes, or until the shallots start to soften. Add the tomatoes, chili flakes, garlic, and oregano. Simmer for 8 to 10 minutes, or until the tomatoes start to burst and adhere to the pan’s bottom. Take off the heat source. Reintroduce the tomato sauce to the skillet after blending roughly half of the tomatoes in a blender until smooth.

Set the skillet’s temperature to medium. After adding the vodka and cooking for two minutes, mix in the cream. Add pepper and salt for seasoning. Maintain warmth on low heat.

 

In the interim, heat up a big pot of salted water to a boil. As directed on the package, boil the pasta until it’s al dente. Empty.

 

Include the pasta in the sauce along with the butter, parmesan, and basil. Toss until the butter melts.

Spoon spaghetti onto plates, then sprinkle cheese and basil on top. Have fun!
