Healthy Sweet Potato Casserole Recipe -Step by Step Guide
Ingredients :
- 8 cups sweet potatoes, about 4 large potatoes
- 1 cup canned coconut milk, light or regular
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- 1 Tablespoon ground flaxseed
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ½ teaspoon sea salt
- ½ teaspoon freshly grated or ground nutmeg
TOPPING
- ½ cup brown sugar or coconut sugar
- ½ cup chopped pecans
- ⅓ cup gluten-free old-fashioned oats
- ⅓ cup oat flour or almond flour
- 3-4 Tablespoons coconut oil, in solid form
Instructions :
Cut the sweet potatoes into big chunks after peeling them. Put the chunks in a big saucepan and cover them with cold water.
Let it boil, then turn down the heat to a simmer. About 15 to 20 minutes, or until the sweet potatoes are soft enough to pierce with a fork. After cooking, let it cool down and drain well.
Before you start, heat your oven to 350°F and spray a 9×13 or 9×9-inch casserole dish with cooking oil.
Put the nuts, oats, oat flour, and brown sugar in a bowl and mix them together. When you add the coconut oil, use a fork or knife to break it up into pieces about the size of peas. Put away.
Add coconut milk, maple syrup, oil, flaxseed, vanilla, cinnamon, nutmeg, and salt to a big bowl. Then use a fork to mash the sweet potatoes. Mix until everything is well mixed.
Pour the sweet potato mix into the dish that has been made. Then, sprinkle the brown sugar and pecan mix on top.
