This may seem like an odd combo to you. A tea loaf with cantaloupe? However, why not? While grating the cantaloupe for this, I realised that perhaps I ought to strain it. Then again, I was like, no! All that wetness cooked into my bread is what we would want. It was a brilliant concept, and the loaf came out beautifully!

Ingredients

  • 3 cups all-purpose flour
  • 1¾ teaspoon cinnamon (ground)
  • 1½ teaspoon salt
  • 1 teaspoon ginger (ground)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 cups sugar (granulated)
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 1¾ cups cantaloupe (ripe, grated (only the flesh))

 

Instructions

Preheat the oven to 350°F. Coat two 5×8-inch loaf pans with flour and grease. In a medium basin, mix together flour, baking powder, baking soda, ginger, cinnamon, and salt.

In a bowl, beat together the sugar, eggs, oil, and vanilla with an electric mixer or a whisk until thoroughly combined and somewhat foamy.

Add the grated cantaloupe and fold. Toss in the dry ingredients with the wet mixture, folding just until combined; avoid overmixing to prevent tough tea cakes.

 

After dividing the batter between the loaf pans, bake for about an hour, or until a toothpick put into the centre comes out clean.

Place on a rack to cool, then flip. Serve room temperature or just slightly heated.

Yields: 2 loaves per recipe.

Your loaf can be kept in a freezer bag, a sizable airtight container, or a dome-covered cake plate. It keeps for two to three days at ambient temperature or for one week when refrigerated. Before biting into your slices, you can reheat them slightly in the microwave for 5 to 15 seconds.

Before storing your loaves, make sure they have completely cooled to prevent condensation in the container. I’ve discovered that keeping them unsliced maximises their freshness.

How to freeze tea loaf

As with the last step, before attempting any of these suggestions, make sure the loaves have completely cooled down. Make sure to properly wrap the loaf or loaves using foil and plastic wrap. Frozen, they will keep for three months.

In this instance, freezing them sliced will keep them fresh. Pre-slice the bread if you plan to merely take one or two slices at a time for a fast snack. Each piece should be wrapped in foil or plastic wrap and kept locked in a freezer bag or sizable airtight container.

Refrigerate or leave on the counter to thaw overnight. Alternatively, you can zap them for 5–10 seconds at a time in the microwave right out of the freezer after removing the plastic wrap.
