Ingredients
- ¾ cup creamy peanut butter *see notes
- ½ cup almond flour
- ¼ cup maple syrup
- ¼ tsp sea salt
- ½ cup dark chocolate chips *see notes
- 1 tsp coconut oil
Instructions
Combine the peanut butter, almond flour, maple syrup, and salt in a medium-sized mixing bowl. Mix everything together with a wooden spoon until a thicker dough forms. Give the dough about twenty minutes to rest in the refrigerator.
Using your palms, roll roughly 1 tablespoon of the contents into a ball. Then, start shaping it into the shape of an egg by flattening the ball with your fingers on a baking sheet and beginning to shape the top into a small point with your fingers. Simply work with it until it takes on the shape of an egg.
Continue with the remaining filling, and to allow them to solidify, refrigerate the baking sheet for a minimum of 20 minutes.
It’s time to coat them in chocolate after they’re solid. To begin, put the chocolate chips and coconut oil in a bowl and microwave for 30 second bursts until the chocolate chips are melted. Stir it approximately every 30 seconds to prevent burning.
Make sure everything is fully coated by using two forks to dip the peanut butter egg into the chocolate. To allow the extra chocolate to fall off, move them to a wire rack that is placed on top of another baking sheet. Continue this process with the remaining eggs and return them to the refrigerator to firm for a minimum of half an hour.
When they’re firm, top them with a heaping helping of sea salt and dig in!
Notes
Use unsweetened natural peanut butter; it should be creamy and runny. Salt and peanuts should be the only components.
To keep them dairy-free, I used the Enjoy Life brand.
FAQs

There is already no dairy in this dish, so there is no need to substitute anything. Just be sure to use an allergen-free chocolate chip; I personally use Enjoy Life, which is dairy-free.
Can I use another type of flour?
You can use coconut flour in place of almond flour if you’d rather not use it. However, you’ll need to use fewer tablespoons—just two to three.
Is this a paleo recipe?
By using cashew or nut butter, you can simply make this dish paleo!
