Healthy Monte Cristo Sandwich RecipeÂ
Since I couldn’t handle cheese, I haven’t had Monte Cristo sandwiches in a long, even though I’ve always enjoyed them. I knew I wanted to make this since I now enjoy goat cheese so much. Inspiring from the sandwich, but simplified by overlaying each component. I really suggest trying the sweet and salty combination if you haven’t already. It’s quite enticing.

INGREDIENTS
- 8 slices grain free bread
- 12 slices smoked deli ham
- 6 slices deli turkey
- 1 cup shredded cheese (I use goat mozzarella)
- 6 large eggs
- 1 cup almond milk
- ½ teaspoon cinnamon
- raspberry preserves for topping
INSTRUCTIONS
Set an oven temperature of 350°F. Lightly grease or line a 9×9 pan with parchment paper.
Four bread slices should be placed in the bottom of the pan, followed by six gammon slices, three turkey slices and half of the cheese. Again, repeat that layer, and then add cheese.
Blend the eggs, almond milk, and cinnamon thoroughly in a sizable glass measuring cup. Make sure the mixture of bread and meat is completely covered and reaches the bottom of the pan by carefully pouring over it. Bake for 25 to 30 minutes, or until the edges are done and the top is golden brown.
Place raspberry preserves on top and warm.
For up to a week, keep covered in the refrigerator.

How to make Monte Christo sandwich?
One white bread slice and one green one should be placed flat. Drizzle one slice with mustard and the other with mayonnaise.
Place thin ham slices shredded gruyere cheese over mustard, then place the second sandwich piece over the cheese. Add butter and melt it in a nonstick pan over medium heat.
Whisk the egg yolks and whites together in a shallow basin after adding the eggs. Take care to submerge both sides of the sandwiches. Melt the butter and fry for 2 to 3 minutes on each side, or until the tops are golden brown.
