Instructions:

  • Olive oil, ground cumin, chilli powder, paprika, salt, and pepper should be mixed with the chicken strips in a bowl before being added to the chicken strips. Toss the chicken until the spices are distributed evenly throughout its surface.
  • A skillet or a pan that does not stick should be heated at medium-high heat. After the chicken strips have been seasoned, add them to the pan and cook them for around five to seven minutes, stirring them occasionally, until they are fully cooked and have a good brown colour.   • To assemble the burritos, begin by spreading a layer of cooked brown rice on each tortilla. Next, line each tortilla with a layer of black beans, chicken strips that have been cooked, onions and bell peppers that have been sautéed, chopped tomatoes, shredded lettuce or spinach, and shredded cheese.
  • A dollop of salsa, guacamole, or Greek yoghurt can be added as an optional topping to enhance the flavour and creaminess of the dish.

 

  • To make a burrito, first fold the sides of the tortilla over the filling, and then wrap it up tightly to achieve the desired shape.
  • If you want the exterior of the assembled burritos to be crispy, you can choose to lightly grill or toast them on a panini press or skillet. This step is optional.

 

  • Immediately prior to serving, sprinkle the chicken burritos with fresh cilantro that has been chopped.
