Healthy Cheesy Chicken Casserole Recipe – Simples Recipe Ever :- I wanted to share with you another one of my favourite recipes that can be made in a single pot. There is rice, chicken, cheese, and broccoli included in it. There are pretty much all of the food categories that you require, so you can be sure that it will be delicious. This meal of chicken and rice is really wonderful, and it has a lot of great flavour. It has been a popular recipe on the site ever since I came up with it and published it for the first time in 2015.

Talk about chicken and rice, shall we? A casserole-style dish consisting of chicken and rice is a dish that everyone enjoys. That being said, the beauty of this dish is that it is prepared in a single skillet, it is extremely speedy, and it is ready in only thirty minutes, which means that dinner will be ready to be served before you know it.
The cheese is my favourite component of this casserole, and I like to put the pan under the grill for about a minute so that the cheese can melt and begin to bubble around the edges. This is a straightforward, fast, and unadulterated comfort dish. Incomparable to that.
Ingredients
- 1 tablespoon olive oil
- 1 small onion (chopped)
- 2 chicken breasts (cut into small cubes)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 cloves garlic (minced)
- ¾ cup rice (uncooked)
- 10 ounces cream of chicken soup ((1 can))
- 2 cups chicken broth (low sodium)
- 2 cups broccoli florets
- 1 cup cheddar cheese
- 1 tablespoon fresh parsley (chopped)
Instructions
The chicken and onion should be cooked. Warm the olive oil in a big skillet that can be used in the oven. To the mixture, add chicken cubes and chopped onion. The chicken should be cooked over medium heat for around five minutes, or until it begins to brown slightly and is no longer pink in colour. Add salt and pepper to taste, and season with salt. To ensure that the garlic develops an aroma, stir it in and continue cooking for another thirty seconds.
Blend in the liquids and the rice. Rice, cream of chicken soup, and chicken broth should be added to the mixture. Begin with two cups of chicken broth, and if additional liquid is required, continue adding it until the rice is completely cooked. Prepare the rice by cooking it. After bringing to a boil, reduce the heat to medium, cover the pot, and continue cooking the rice over medium heat until it is completely cooked, stirring it occasionally.

This should take approximately fifteen minutes. Consider the seasoning, and make any necessary adjustments.
Lastly, finish with some cheese and broccoli. During the next two minutes of boiling, add the broccoli florets and half of the cheese, and continue cooking until the broccoli becomes slightly more tender. Place the skillet under the grill for a couple of more minutes, just until the cheese begins to melt and begin to brown a little bit, and then sprinkle the remaining cheese over the top. Add garnishes, then serve. Add some fresh parsley as a garnish, and then serve.

Notes
Put in advance: The preparation of this can be done the night before, up to and including step 2, and then the pan can be covered with a lid made of aluminium foil and stored in the refrigerator until the following day, when it is ready to be cooked. You need only proceed with the remaining steps of the recipe as directed.
Be sure to blot the broccoli dry before using it if you are using frozen broccoli.
Feel free to put in more vegetables like mushrooms, peppers, or cauliflower if you want to make this casserole more interesting. The following types of rice should I use: I used Basmati, which is a type of long grain rice, and I would recommend using long grain rice rather than short grain rice because the latter produces a rice that is creamier than the former.
Short grain rice. The cooking time will be longer and the amount of liquid may need to be increased if brown rice is used. In the event that you desired to expedite this process, you could even use rice that cooks quickly. When it comes to storing leftovers: Keep any leftovers in the refrigerator for up to three days if they are stored in an airtight container.
