Instructions

  • Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit). Prepare a muffin tray by lining it with liners or spraying it with cooking spray to lightly oil it.
  • Combine the rolled oats, whole wheat flour, baking powder, baking soda, and salt in a large mixing basin. Mix until everything is well distributed. Mix thoroughly until everything is incorporated.

 

  • To make a smooth consistency, mash the ripe bananas in a separate basin. Include the honey or maple syrup, applesauce that has not been sweetened, milk, an egg, and vanilla extract in the mixture.

Why did the oven start off at such a high temperature? It is recommended that you bake the muffins for five minutes at a very high temperature, just like I do for the majority of muffin recipes. Next, while the muffins are still in the oven, reduce the temperature to a lower setting for the remaining time that they are in the oven.

Because of the high temperature that was used initially, the tops of the muffins will soon rise to an unusually high level. About six in total. To make small muffins, bake them at 350 degrees Fahrenheit for 12–14 minutes. Gets approximately 36–40 in total.

For the loaf pan, although I have not personally tested this recipe as a loaf, the amount of batter is plenty for a loaf pan measuring 9 inches by 5 inches. Although I am not sure what the optimal baking time is, you can use this recipe for zucchini bread as a source of inspiration.

 

A few minor adjustments were made to the recipe, which resulted in muffins that are more tasty and moist than before. If you want to make the previous version, you need exclude the vanilla extract, coconut oil, and baking powder. Add a quarter cup of Greek yogurt (60 grams) and another half cup of flour (about 63 grams).
